a "new simplicity" characterizes our approach to cooking; we like to use regional products in a contemporary and unfussy way. 

our cuisine is unpretentious, distinguishing itself by prime quality. we have a preference for fresh fish from the surrounding streams and lakes, "pinzgauer tauernlamm" (lamb bred in the alpine region of the "tauern") and austrian game. not only do we have the expertise in the preparation of innards in a delicious way (we are well-known for these dishes) and the classic austrian cuisine but also in the preparation of sweet austrian temptations such as jam-filled pancakes, "powidlascherln" (dough made of potatoes filled with prune jam) and "topfenknöderl" (sweet dumplings made of cream cheese).

our meals are composed of the ingredients that are given to us by nature, depending on the season. therefore we do not use sea fish, strawberries in december and asparagus imported from chile. we hold the food that we use for cooking in high regard.
